Easy Cookie Dough Protein Truffles

This weekend, I took the plunge and got a haircut for the first time in ages. And I don’t mean just a trim—I went for a full transformation! My stylist chopped off significant inches, holding the hair up for me to see in the mirror, and I couldn't help but gasp in a mix of excitement and shock.
After committing to growing my hair since my pixie cut back in 2013, I felt liberated walking in with pictures of long bobs and saying, "Let’s do this!" The change feels refreshing and fun, and I can’t stop reaching for my former ponytail.
Now, onto a fun recipe! These Cookie Dough Protein Truffles are a perfect mix of snack and dessert, and they’re incredibly delicious.
Ingredients:
- Evo Hemp Cookie Dough Hemp Protein Bars
- Virgin coconut oil
- Vegan dark chocolate chips
That’s it!
Instructions:
- Prepare a sheet pan with parchment paper and set aside.
- Melt the coconut oil in a small saucepan over medium-low heat.
- Place the bars in a high-speed blender or food processor, add the melted coconut oil, and pulse until the mixture forms a rough ball. Be careful not to over-blend; you want to keep those chocolate chips intact!
- The dough should hold together when pressed. If it’s too crumbly, add a tiny bit more melted coconut oil.
- Use a cookie scoop to portion the dough, then roll it into balls with your hands.
- In a saucepan over medium heat, melt the chocolate until fully smooth.
- Transfer the melted chocolate to a small bowl. Dip each cookie dough ball into the chocolate until completely coated.
- For easier handling, use a toothpick or two forks to help drain off the excess chocolate before placing them on the parchment-lined baking sheet.
- You can leave the truffles as they are or sprinkle them with Evo Hemp Hearts for added protein and visual appeal. If you used toothpicks, be sure to remove them before the chocolate hardens.
- Refrigerate or freeze the truffles for 10-30 minutes to allow them to set.
Store the truffles in an airtight container in the refrigerator for up to two weeks, or freeze them for longer storage.
