10-Minute Low-Carb Enchiladas!

These enchiladas are a staple on my menu! You can easily prepare them in advance and just pop them in the oven when you get home from work—so convenient!

Low-Carb Enchiladas

Ingredients:

  • Shredded rotisserie chicken
  • Your favorite clean pasta sauce
  • Preferred clean taco seasoning
  • Zucchini ribbons (thinly sliced with a mandolin)

Toppings:

  • Evo Hemp Seeds
  • Cheese (goat cheese is recommended for easier digestion)
  • Greek yogurt
  • Salsa
  • Avocado
  • Cilantro

Instructions:

  1. Combine your desired amount of pasta sauce with taco seasoning, adjusting to your taste, and mix in the chicken (no need for precise measurements).

  2. Roll the sauced chicken in the zucchini ribbons and arrange them in a baking dish. Repeat until the dish is filled.

  3. Optionally, top with goat cheese (easier to digest than cow's cheese) and bake at 350°F (175°C) for about 10 minutes.

  4. Finish by adding cilantro, jalapeños, avocado, and a sprinkle of Evo Hemp Seeds
